The menu celebrates fresh, locally sourced ingredients — with an emphasis on seafood caught daily from the Indian Ocean. Each dish is prepared by Head Chef Anthony Huth, whose passion for creativity and sustainability inspires every menu. Chef Anthony designs each season’s dishes around what’s available locally — from sustainably caught fish and shellfish to herbs and vegetables grown in Almanara’s own organic garden.

Guests can often see the day’s catch being brought in from our private fishing boat, with some of it smoked in-house to create Sails’ signature flavours. His menus highlight Kenya’s incredible natural produce while introducing global influences that reflect a modern coastal identity.
